Preperation

A fresh calf liver, cleaned of nerves is thinly sliced. After washing with plenty of water and salting, it is floured and mixed together. It is then panned in a large pan with heated oil. Salt is added once again when taken out of the pan.It can be served with dried, panned red peppers, cacık (a mixture of cucumber and yoghurt with water and salt) ayran (liquid yoghurt with water and salt added) or coke.
Though not oftenly cooked at home, Edirne’s panned liver meal restaurants can be found everywhere in the city.
